Makes 8 cannoli
Ingredients
- 1 pack cannoli shells
- 2 tbsp shredded coconut, to garnish
Dark chocolate mix
- 1 x 45g Well Naturally Chocolate Rich Dark, melted
- 3 tbsp Cacao Nibs
- 250g soft ricotta
- Hot water
Milk chocolate mix
- 1 x 45g Well Naturally Chocolate Creamy Milk, broken into squares
- ½ cup Golden Berries, soaked in boiling water for 10 minutes and drained
- 250g soft ricotta

Method
- To make the dark chocolate mix, combine the melted chocolate with the ricotta and 1 tbsp hot water. Mix until smooth.
- Fold through 2 tbsp Cacao Nibs and set aside.
- To make the milk chocolate mix, melt 4 squares of Well Naturally Chocolate Creamy Milk in the microwave for 30 seconds and mix immediately with the ricotta.
- Finely chop the remaining Well Naturally Chocolate squares and fold through the ricotta mix with the soaked and drained Golden Berries, reserving 8 to decorate the cannoli ends.
- To assemble the cannoli, use a teaspoon to fill half a cannoli shell with the dark chocolate mixture.
(Cook’s note: use the spoon handle to help push the mixture in the cannoli). - Repeat on the other side of the cannoli with the milk chocolate mix.
- Decorate the end of the dark chocolate side with the remaining Cacao Nibs, and dot the end of the milk chocolate side with the reserved Golden Berries.
- For best results, enjoy in one day. Leaving them the cannoli for too long can cause the shells to soften.
