Coconut Dream Bars

Unbelievably decadent. Coconut and dark chocolate are a match made in heaven and these little bars will surely transport you to your own little paradise. To share, package them in a cute wrapper or jar, tie with ribbon, and make your friends smile.

Serves 4


For the filling

  • 2 cups shredded coconut
  • 1 cup desiccated coconut
  • ¼ cup of cashews
  • 3 drops of liquid stevia (or to desired sweetness)
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons coconut oil

For Chocolate layer

  • 200g Well Naturally Rich Dark Chocolate, roughly chopped
  • 1 rounded teaspoon coconut oil, melted


For the filling

  1. Whiz all ingredients together in a high powered blender or food processor until thoroughly combined and at your desired texture.
  2. Shape the mixture into small, log shape bars and place on a biscuit tray lined with baking paper to refrigerate until firm and ready to coat.

For the chocolate coating

  1. Melt the chocolate and stir through the coconut oil until smooth and glossy.
  2. Once the chocolate has cooled slightly and begins to thicken, lower the bars into the mixture, coat evenly and place on tray to set.
  3. Repeat until all bars are coated and allow to cool at room temperature before transferring into an airtight container to store in the fridge (if they last that long), and enjoy!
